Made a (modified) French onion soup today. Surprised myself. I generally do not like this when it's offered at meals, so I generally just eat the bread-and-cheese off the top.

However, I had a pile of onions staring at me and the desire to cook something slow and good, so I decided upon this.

I had no bread and no cheese, mind you, so it was pretty funny. I caramelized the onions in vegetable stock. Separately, I boiled some vegetable stock in the blue pot shown in the picture. I made up some flour-and-baking powder dumplings and dropped those into the stock. I was out of milk, so I just used the stock in the flour mixture.

Anyway, when the dumplings were done, I scooped them out and set them aside. I then stirred the now-darkened onions into the remaining stock in the blue pot. Then I put the dumplings back on top and baked in the oven for 40 minutes at 375F.
