Dad had a tough week and he happened to buy some pie crust this week, so I'm making a peach pie. I just finished the peach filling - OMG fantastic! - and it is cooling off. Peaches with a "simple thickening sauce" of sugar, lemon, nutmeg, butter, salt, flour and a tad bit of peach juice. The pie crust is ready to go, oven is warm, egg wash prepared, cinnamon sugar (for the top crust) ready. Someday I'll remember to bring a camera with me when I'm cooking at my folks' place.
